菌菇鱼面筋

这道菜营养丰富,美味无敌。荷兰豆口感脆甜,菌菇鲜香爽滑,吸满鲜美汤汁的鱼面筋嫩鲜有弹性。   鱼面筋的做法

菌菇鱼面筋 (Stir Fried Mixed Mushrooms with Fish Balls)

 

准备 (Preparation): 15分钟 (minutes)

量(Serves):        3份    

 

食材 (Ingredients):

鱼面筋(fried fish balls) 12个

姜 (ginder, sliced) 5-6片

鲜蘑菇(fresh mushroom) 6-8颗

鲜花菇 (shiitaki mushroom) 6-8颗

胡萝卜(carrot) 1根

荷兰豆 (green bean) 约20个

冬笋(选项) (bamboo shoot),小半颗  

生抽 (light soy sauce) 1大匙

糖 (sugar) 1小匙

生粉 (corn starch)1大匙,加2大匙水拌匀

香油 (sesame oil) 少许    

 

做法 (Directions):

A. 胡罗卜切片,荷兰豆拉掉两边的茎。把胡萝卜和芸豆在油盐水焯2分钟,捞出泡冰水2分钟,滤水;

B. 鲜蘑菇和鲜花菇用厨房纸擦干净后一切四, 冬笋切片;

C.锅里加2大匙油,油热后加蘑菇和花菇,中火炒5-6分钟至软;

D. 锅里放少油,加姜片,鱼面筋,冬笋,生抽,糖和100ml开水,大火烧开后加盖转中火焖4-5分钟;

E. 太白粉水勾芡后加入胡萝卜片和芸豆,拌匀加香油。

贴士 (Tips):

a) 蘑菇不用水洗,遇水会发黑并失去鲜味。可按喜好选用各种菌菇,如皇子菇,草菇等。菌菇遇盐分会出水;

b) 食素者,可用素面筋或各种素圆代替鱼面筋;
