糖渍橙皮

Candied Orange Peel

糖渍橙皮色泽金黄,橙香浓郁,对预防感冒和饭后积食都很有效。糖渍橙皮泡茶喝可理气消涨,具有保健作用。做好的糖渍橙皮放在密封容器里,阴凉处可存放3个月以上。 
糖渍橙皮 (Candied Orange Peel)

Serves:             2 cups
 

INGREDIENTS 
Citrus or Orange
, 8  S
ugar
, 1/2 cup  
Salt
, 1 tsp

DIRECTIONS
 
A.
Cut peel on each orange;  
 
B.
Cook orange peels in salty water for 10 minutes, let cool. Use a sharp knife to remove white pith, cut into 3mm wide strips; 
C.
In a medium saucepan, bring 80ml water and 1/3 sugar to boil, stir to dissolve sugar. Add peels, return to boil and reduce heat, simmer until peels are soft and transparent, about 40 minutes, let cool.

Toss peels with remaining sugar, and transfer sugar-coated peels on a baking sheet line with parchment paper. Separate strips, let stand until coating is dry, 5-6 hours or up to 2 days;
 
E.
Scrape off excess sugar clumps, store them in a dry location and they should keep for up to 2 months.

TIPS Can place the sugar-coated peels in the warm oven or food dehydrator and allow them to dry out, this will take approximately one hour.

橙子

做法:
1)
橙子用细盐擦表皮,切下橙皮 (
A)
2)
橙皮条用盐开水煮15分钟,冷水冲后用刀削去背面白膜,切成3mm宽条 (B)
3)
锅中加冰糖和80ml的水,水开后加橙皮条,小火煮30分钟至糖液浓稠,橙皮透明油亮,熄火 (C) 4) 糖渍橙皮放在蜡纸上铺开晾干5-6小时 (D)
5)
撒点糖拌匀后放入容器 (E)
 

贴士
:用盐擦表皮可使橙皮表面的油挥发一点,减少辛辣味。橙皮可以用桔皮代替。如果用食物烘干(food dehydrator)135F烘干40分钟即可。
