Broccoli Cream Soup

Broccoli Cream Soup

Preparation:      10 minutes

Cook Time:       20 minutes

Serves:               5

 

INGREDIENTS

Broccoli, 400g  

Onion, half  

Butter, 3tbsp  

All purpose flour, 3tbsp  

Whipping cream, 60ml  

Salt & Pepper to taste  

 

DIRECTIONS  

A. Chop onion finely, cut broccoli into small pieces;  

B. Melt butter in medium sized stock pot, and sauté onion until tender, add flour, mix well;  

C. Add broccoli and 800ml broth, cover and simmer for 10 minutes;  

D. Pour the soup into a blender, using a few quick pulses to get the soup moving, then puree until smooth;  

E/F. Sift the soup, bring to boil, add cream and salt, serve.
