Butternut Squash Soup

Butternut Squash Soup

 

Preparation: 20 minutes

Cook Time: 30 Minutes

Servings: 6-8    

 

Ingredients

1 large butternut squash, 4lbs

1 carrot 1 medium onion

8 cups water

2 tbsp Butter

1 tablespoon salt

1/2 cup cream (10%), optional

Fresh herbs (parsley leaves or thyme)    

 

Instructions

A. Remove butternut squash skin and cut into 1" square cubes, roughly chop carrot and onion.

B. Sauté onions in butter for 5 minutes or until tender, add carrots, sauté for 2 minutes.

C. Add butternut squash cubes, and 8 cups of boiling water. Bring to a boil, then cover and simmer for 20 minutes.

D. Using a hand-held immersion blender, purée the soup until silky smooth. Stir in cream and bring to a simmer (optional). Taste and adjust seasoning. Ladle the soup into bowls and garnish with fresh chopped herbs.
