Coleslaw

Preparation:      20 minutes

Yield:                 6-8

 

INGREDIENTS

Red cabbage, 1/4 small, 600g, sliced thinly  

Green cabbage, 1/2 small, 600g, sliced thinly  

Carrot, 1, julienned  

Cilantro(optional), 1/2 cup, finely sliced  

White sesame seeds (toasted), 1/3 cup  

Coleslaw

 

DRESSING

Mayonnaise, 1/2 cup  

Mustard, 2 tbsp  

Lemon zest, 1/2 lemon  

Lemon juice, 2 tbsp  

Honey 1 tbsp  

Ground Pepper, 1 tsp  

 

DIRECTIONS  

A. Remove any tough outer leaves from the cabbage, trim the core and tough stems from the cabbage and thinly slice; Julienne carrots;  

B. In a large bowl, combine cabbage and carrots;  

C. In a separate bowl, whisk together all dressing ingredients;  

D. Add dressing into the salad, toss to coat evenly. Sprinkle with toasted sesame seeds.

TIPS

a) Serve this right away, or store it in the fridge for 2 hours or overnight for a slaw pickled.  

b) Non-Mayo Yogurt Miso healthy Dressing: Greek yogurt 1/2 cup, lemon zest, white Miso 2 tbsp, Mirin 3 tbsp, Lemon juice 3 tbsp, Honey 1 tablespoon, Sesame oil 1tbsp, Salt & Pepper to taste.
