Zucchini Vegan Rolls

These cute zucchini rolls stuffed with avocado, cucumber, red bell pepper and fresh pea shoot, are quick and easy to make, very tasty and healthy.

Preparation: 30 minutes

Yield20 rolls

  

Dipping Sauce

·         1 whole, ripe avocado

·         1 tablespoon finely chopped onion

·         1 teaspoon lemon juice

·         1/4 teaspoon of Kosher salt

·         A pinch of pepper

 

Zucchini rolls

·         1 zucchini

·         1 cup fresh Pea shoot

·         1 red bell pepper

·         1 cucumber, julienned

 

Directions:

A. Prepare the sauce: Combine all of the sauce ingredients in a food processor or blender. Process until smooth. Scrape the sauce into a small bowl and set aside until ready to serve.

B. wash, top and tail the zucchinis and use a mandolin to cut them into fat ribbons. Lay the zucchini ribbons on a flat surface;

C. Spoon a teaspoon of the avocado sauce mixture into the centre of zucchini ribbons, and spread it out evenly. Leave some space at the narrowest end, as the mixture will actually spread a bit when you go to roll it up.

D. At the wider end of the strip, place 3-5 each of the pea shoot, julienned pepper and cucumber;

E. Roll and repeat till you have made use of all the avocado sauce. Serve on a platter.
