Stir Fried Sweet Corn with Pine Nuts

Preparation:      10 minutes

Cook Time:       15 minutes

Serves:             2  

 

INGREDIENTS  

Pine nuts, 1/3 cup  

Sweet corn, 2 cups  

Sweet pea, 1/2 cup  

Carrot, half  

Salt & Pepper to taste  

 

DIRECTIONS  

A. Preheat oven to 320F, bake pine nuts for 10 minutes;  

B. Combine sweet corn and peas, place tem onto a clean paper towel or sifter and let them dry;

C. Peel the carrot and blanch for 3 minutes. Drain and cut into small cubes;  

D. Heat two tablespoon of olive oil, add corn, peas and carrots, stir-fry for 2-3 minutes, add salt and pepper to taste;  

E. Add roasted pine nuts, mix well, serve warm.    

 

TIPS

The portion of each ingredient can be adjusted based on personal preference.
