Braised Pea Sprout with Oyster Mushroom

Preparation:      10 minutes

Cook Time:       10 minutes

Serves:             3-4  

 

INGREDIENTS  

Pea Sprouts, 700g  

King Oyster Mushrooms, 180g  

Carrot, 1  

Potato Starch, 1 tbsp    

Vegetable Stock, 150ml    

Salt, 1.5 tsp  

 

DIRECTIONS  

A. Rinse and drain the pea sprouts, remove tough stems. Slice the carrot and king oyster mushrooms;    

B. In a large saucepan, bring 1500ml water and 1 teaspoon salt to boil, add pea sprouts, and blanch for 2 minutes. Drain and leave on a plate;    

C. In a medium sauce pan, boil the vegetable stock. Add sliced carrots and king oyster mushrooms, cook for 5 minutes, add salt to taste. Add potato starch to thicken the ingredients, and pour over cooked pea sprout.    

TIPS  

To use potato starch as thickener, add 1 tablespoon of potato starch to 3 table spoons of water, mix well before adding into a hot soup. Potato starch does not stand up well to freezing or overcooking.
