Tiramisu

Tiramisu

Preparation:      45 minutes
Refrigerate:       overnight

Serves:               8 

INGREDIENTS


Egg yolks
, 3, room temperature  
Sugar
, 3/4 cup  
Mascarpone cheese, 100g, room temperature  
Whipping cream
(35%), 450ml
 
Lady fingers
, 1 package, approx. 400g 
Liqueur (Kahlua or Beiley’s)
, 80ml  
Cocoa powder
, 1/3 cup, for dusting 


TOOLS

Hand mixer
Spatula (optional)
Sifter
Container 


DIRECTIONS
 

A/B.
Combine egg yolks and sugar over warm water (~80F), whisk yolks until thick and light in color;  
C/D.
Add mascarpone to whipped yolks, whisk until well mixed;
E.
In a separate bowl, use a hand mixer to whip cream till stiff peaks form (start off at high spead for 3 minutes, then medium for 1 minute);
F.
Gently fold half cream into yolk/cheese mixture, mix well. Then add the remaining cream, mix until the mixture is smooth;
G.
Dip lady fingers in coffee liqueur on both sides, shake off excess liqueur, and line on a large plate;
 
H/I/J.
Line soaked lady fingers on the bottom of container, spread 1/3 of custard over the lady fingers, use a spatula to smooth the top, sprinkle with cocoa;
K. Repeat Step H/I/J. Refrigerate overnight.
