Candied Orange Peel

糖渍橙皮 (Candied Orange Peel)

Preparation:       15 minutes

Cook Time:       60 minutes

Serves:           2 cups   

 

INGREDIENTS 

Citrus or Orange, 8  

Sugar, 1/2 cup  

Salt, 1 tsp  

 

DIRECTIONS 

A. Cut peel on each orange;   

B. Cook orange peels in salty water for 10 minutes, let cool. Use a sharp knife to remove white pith, cut into 3mm wide strips; 

C. In a medium saucepan, bring 80ml water and 1/3 sugar to boil, stir to dissolve sugar. Add peels, return to boil and reduce heat, simmer until peels are soft and transparent, about 40 minutes, let cool. 

D. Toss peels with remaining sugar, and transfer sugar-coated peels on a baking sheet line with parchment paper. Separate strips, let stand until coating is dry, 5-6 hours or up to 2 days; 

E. Scrape off excess sugar clumps, store them in a dry location and they should keep for up to 2 months.

TIPS

Can place the sugar-coated peels in the warm oven or food dehydrator and allow them to dry out, this will take approximately one hour.
